This month, we're focusing on Pineapple!
With summer in full flow and summer barbeques and sunset-filled evenings a plenty, exotic snacks and sweet treats are an absolute must have. Pineapple therefore, is the ideal summer fruit and with its sweet flavour and tangy kick, there are a variety of recipes this juicy fruit is the perfect ingredient for.
Choose from one of the delicious recipes below to make good use of your leftover pineapple!
Sorbet is a delicious (and fairly low calorie!) way to cool down in the summer, and it's easy to make too! Simply combine pineapple, a little syrup and water in a blender until pureed. Slowly bring the boil then remove from the heat and add lime juice as the mixture cools. Once completely cool, place on a large tray and leave in the freezer overnight.
Summertime = cocktail time and a pina colada is arguably one of the most delicious options on any cocktail menu. To make your own simply mix pineapple juice, white rum and coconut cream in a blender until smooth.
Spicy pineapple chutney
For a sweet and spicy addition to any meal, pineapple chutney is the ideal choice. Simply bring to the boil a mixture of vinegar, sugar and pineapple. Leave the mixture to cool and add onions and chilli flakes then chill for up to 24 hours.
Seafood and pineapple kebabs
To create these delicious pineapple and seafood kebabs for your summer barbeque, simple thread prawns, salmon and pineapple onto wood skewers - you can marinade the ingredients in coconut milk and spices too if you'd like an extra exotic flavour!
