This month we're focusing on Mango!

First grown in India over 5,000 years ago mangos have been a firm favourite for the UK throughout the years found in thousands of popular food and drink recipes. Not only are mangos delicious, numerous studies have shown the fruit can help improve your health. Mangoes can help with diabetes, improves digestion and helps fight heat stroke!

Find out how to make the most of mangos with the following recipes.

Curried chicken and mango salad

A quick and healthy meal that incorporates yummy mango! Start by seasoning your chicken fillets by mixing oil and 1 tsp of curry powder and coat the meat, put the chicken on a foil-lined baking tray and bake for 20 minutes. While the chicken is baking, make the salad dressing by combining curry powder, yoghurt, chutney, lime zest and juice. When the chicken is done add to lettuce leaves, and then continue to drizzle the salad with mango and the dressing, add red onion and sesame seeds for more flavour!

Mango, pear and ginger crumble

Placed peeled pears into a saucepan with sugar and 4 tbsps of water, cook on gentle heat for 5 minutes until the pears have softened. After this remove from the hob and stir in chopped mangoes and stem ginger, add the mixture to a baking dish and leave until cold. To make the crumble topping rub butter into flour and stir in sugar and pecan nuts. Sprinkle the mixture over the chilled fruit and bake for 30 minutes until brown, and voila your crumble is ready to eat!

Mango and passion fruit meringue roulade

The perfect end to any dinner party, a mango and passion fruit meringue roulade is deliciously rich yet low in fat and gluten-free! Start by lining a swiss roll tin with non-stick baking parchment, then continue to beat egg whites until doubled in size. Gently whisk in caster sugar, cornflour, vinegar and vanilla extract into the mixture, then spoon into the tin and bake for 30 minutes. Remove from oven and then dust another sheet of paper with icing sugar, turn the meringue onto this and peel off the attached lining paper at the bottom. Spread yoghurt over the meringue and scatter with mango and passion fruit, use the paper to roll up the roulade and then you’re finished!
